POTATO & MOZZARELLA STICKS

1 Russet Potato 3 Mozzarella Sticks 3 Carrots 1 Onion 2 Garlic Cloves 2 Tbsp Olive Oil Salt Preparations: 1- Peel and dice the potato and carrots. 2- Dice the onion. 3- Slice the mozzarella sticks to preferred size. Directions: 1- Transfer the diced potato and carrots into a pot. 2- Add salt and enough water to cover the potatoes. 3- Cover the pot and over medium heat simmer for 30 minutes or until the ingredients are tender. 4- Fry the diced onions with olive oil until golden. 5- Mash in the garlic cloves, stirring. 6- Fry the garlic cloves along for few more minutes. 7- Drain the cooked potatoes. 8- Mash the fried onions and cooked potatoes and carrots together. 9- Take a fist full of the mashed potatoes and wrap around mozzarella sticks. 10- Grease a (cookie) pan and transfer the stick onto the pan. 11- Broil the potatoes in oven over high temperature for 3 to 5 minutes or until golden.
